1. Responsible for day to day shop operation. 2. Work with shop manager for maintaining high level of customer service and satisfaction. 3. Effectively delegate jobs and responsibilities to shop staff. 4. Communicate with management across the company to ensure effective running of the business as well customer satisfaction. 5. Assists shop manager with management personnel to set targets and incentives to increase turnover and profitability of restaurant. 6. Assist shop manager review and monitor, with stock manager or financial personnel, expenditures to ensure that they confirm to budget limitations, work to improve performance. (in-case of improvement) 7. Supervise operation of shop to maximize profitability, minimize legal liability. 8. Plan wine and drinks list suit to menu (Caviar, oyster, foie-gras, cold cut, Etc…) and clientele. Monitor the purchasing of supplies and perform frequent checks to ensure consistent high quality of preparation and service. 9. Work with management personnel to plan and organize shop event. 10. Manage staff working hours, holidays, and staff OT for shop manager. 11. Coordinate with shop manager organizing sales promotions, yearly holiday gifts offer. 12. Coordinate with shop manager ordering stock, stock control & stock takes. Report twice a week to all manager involvement. 13. Monitor expense monthly with shop manager & finance manager.
