Jobs Description

  • Food Preparation & Execution: Assist the Head Chef in all kitchen operations. Prepare and cook Japanese cuisine following traditional recipes, ensuring consistency and adherence to the highest quality standards.
  • Quality Control & Cost Management: Ensure all food ingredients and prepared dishes meet top quality standards. Be mindful of and manage food costs by optimizing usage and minimizing waste.
  • Menu Development: Collaborate with the Head Chef on menu planning, recipe development, and seasonal updates.
  • Supervision: Oversee, mentor, and supervise the culinary team (Cooks and Kitchen Staff).
  • Staffing & Scheduling: Assist the Head Chef with staff scheduling, managing shifts, and delegating tasks effectively.
  • Personnel Management: Address and resolve personnel conflicts and behavioral issues promptly and professionally.
  • Inventory Management: Manage kitchen inventory, track stock levels, and assist with ordering and receiving supplies to maintain optimal operational flow.
  • Sanitation & Safety: Ensure the kitchen and all staff strictly adhere to sanitation, hygiene, and workplace safety standards, including implementing and overseeing relevant training programs.


Jobs Requirement

  • Minimum of 4 years of progressive experience working as a Sous Chef or in a similar supervisory role within a high-quality Japanese culinary establishment.
  • Proven, in-depth knowledge and proficiency in authentic Japanese cooking techniques (e.g., sushi, tempura, kaiseki, robatayaki, etc.).
  • Effective verbal and written English communication skills.
  • Excellent interpersonal skills, self-confidence, and proven ability to lead, motivate, and resolve team conflicts.
  • Comprehensive knowledge of food sanitation, safety protocols, and proper handling procedures.
  • Must be flexible and willing to work shifts, including evenings, weekends, and holidays, as required by the business needs.
